Yeah, you're not locked in. I cancelled mine for a couple months during a slow period and then restarted without issues.

If I post a project and then it doesn't work out, like the contractor flakes or whatever, what happens then? Am I out of luck?

They have a process for if a project isn't completed. You'd contact their support about it.
